Scarlette's Marvelous Muffins

Customer Scarlette Sloan highly recommends this delightful mix of fruit and grain to make the perfect muffins for Celiacs.

  • 2 cups GF Biscuit Mix
  • 1 cup GF Mighty Tasty Hot Cereal
  • 3/4 cup Brown Sugar
  • 1 Tbsp Ground Cinnamon
  • 2 cups Carrot grated
  • 2 cups Granny Smith Apples diced
  • 1/3 cup Orange Juice
  • 1 cup Blueberries (or berry of choice)
  • 1 cup Skim Milk
  • 3 Egg Whites large
  • 2 tsp Vanilla Extract
  • 1/4 cup Mixed Nuts
  • 1/2 cup Applesauce unsweetened
  • 1/4 cup Brown Flaxseeds

Directions

Preheat oven to 375°F. Combine Biscuit & Baking Mix, GF Mighty Tasty Hot Cereal, brown sugar and cinnamon in a large bowl. Stir well with a whisk. Stir in carrots, apples, nuts, flaxseeds and berries. Put mix aside. Combine milk, applesauce, vanilla, egg whites and orange juice in a blender of food processor and blend until smooth. Add to baking mix and stir until moist. Spray muffin cups with cooking spray. Spoon batter into muffin cups. Bake for about 20 minutes. Remove muffins from pans immediately and place on cooling rack. Makes 18 Muffins.

good tasting and healthy. not having to use oil is great. I used all my leftovers...older peeled carrots, softer apples (2 of which I cooked for the apple sauce part), rasberries that were on the verge. I have a hot stove so I cooked them at 350. note: I did add a tad of baking soda.

Very disappointed about this recipe. The GF biscuit mix has garbanzo bean flour in it, and everything made with this bean flour is gross. I figured it could be overpowered by all the other ingredients and so I bought everything for this recipe. I will be throwing it in the garbage.

I'm sorry to hear that you do not enjoy our GF Biscuit Mix due to the Garbanzo Bean Flour. As we have many gluten free muffin recipes, you may be interested in trying one that does not contain this mix.
