Scarlette's Marvelous Muffins

Customer Scarlette Sloan highly recommends this delightful mix of fruit and grain to make the perfect muffins for Celiacs.

  • 2 cups GF Biscuit Mix
  • 1 cup GF Mighty Tasty Hot Cereal
  • 3/4 cup Brown Sugar
  • 1 Tbsp Cinnamon, Saigon (Premium)
  • 2 cups Carrot, grated
  • 2 cups Granny Smith Apple, diced
  • 1/3 cup Orange Juice
  • 1 cup Blueberries (or berry of choice)
  • 1 cup Skim Milk
  • 3 Large Egg Whites
  • 2 tsp Vanilla Extract
  • 1/4 cup Mixed Nuts
  • 1/2 cup Applesauce, unsweetened
  • 1/4 cup Brown Flaxseeds

Directions

Preheat oven to 375°F. Combine Biscuit & Baking Mix, GF Mighty Tasty Hot Cereal, brown sugar and cinnamon in a large bowl. Stir well with a whisk. Stir in carrots, apples, nuts, flaxseeds and berries. Put mix aside. Combine milk, applesauce, vanilla, egg whites and orange juice in a blender of food processor and blend until smooth. Add to baking mix and stir until moist. Spray muffin cups with cooking spray. Spoon batter into muffin cups. Bake for about 20 minutes. Remove muffins from pans immediately and place on cooling rack. Makes 18 Muffins.
