Apple Cinnamon Oat CerealContributed by: Today's Health & WellnessThis simple cereal uses milk powder for a protein kick and fruit juice as a sweetener. Whole Grain! High Fiber.
DirectionsStep 1Preheat oven to 300°F. In a large bowl, mix the oats, milk powder and cinnamon.Step 2In a small bowl, stir the apple juice concentrate, vanilla and oil. Add liquids to the oat mixture and stir to coat.Step 3Spray a sheet pan (make sure the pan has at least a 1-inch rim) with vegetable oil spray. Spread the oat mixture on the sprayed pan and bake for 30 minutes, then use a metal spatula to turn over portions of the mixture on the pan. Bake for another 30 minutes; repeat. Bake for another 20 to 30 minutes. Let cool on a rack until completely cool and dry.Step 4Transfer to an airtight storage container. Serve 1 cup cereal with 1/4 cup raisins or other dried fruit of choice; top with skim milk or nonfat yogurt.Makes about 16 servings. |
