Scottish Oatmeal Pancakes or WafflesContributed by: Bob's Red Mill Natural FoodsThis recipe is on the label of our Scottish Oatmeal.
Directions
Mix flour, oatmeal, baking powder, salt and soda. Stir in 1-1/2 cups buttermilk, the eggs and butter until smooth. (Stir in a little more buttermilk if batter becomes too thick.) For waffles just add 1 more egg and 1 tablespoon of oil. Makes about 12 pancakes.

This recipe makes fabulous waffles. I make a double batch and then freeze the leftovers, so we can pop them in the toaster for a quick breakfast. They freeze well. I wrap two in plastic wrap so they are easier to separate.
