Carmelled Popcorn

Directions

Pop popcorn according to package directions. Set aside.

In a medium saucepan combine whey powder, brown sugar, corn syrup, cream of tartar, butter and water. Over medium-high heat cook until soft ball stage, stirring constantly. Watch closely, do not allow to burn or boil over. Syrup mixture will turn bitter if cooked too long.

At soft ball stage remove from heat, add baking soda and whip well with wooden spoon or whisk. Caution should be applied when adding the baking soda; syrup will foam up. Do not get hot caramel on your skin. It will stick and cause a severe burn.

Carefully pour hot caramel sauce over cooked popcorn and stir to blend using a wooden spoon or heavy-duty spatula.

Note: Nuts, raisins or dried cranberries can be added at this point if desired.
