Bob's High Fiber Bran Muffins

This recipe can be found on our bags of Wheat Bran. High Fiber, Low Cal, Low Fat.

Directions

Step 1

Stir together: bran, flour, soda and baking powder. Then stir in raisins and set aside. Blend milk, molasses, oil and egg. Add to dry ingredients and stir JUST UNTIL MOISTENED.

Step 2

Spoon into greased muffin tins and bake in preheated 400 degrees oven for 15 minutes or until muffins pull away from sides of cups.

Makes 12 marvelous muffins!

Notes

I like to add 1/2 cup applesauce and 1/4 cup of chopped nuts when I make this recipe for our guests.

These muffins are excellent. I used a "no carb" sugar replacer and added nuts. With my ingredients, my calculations are about 13 carbs per muffin.

This recipe is a little different than the one on the package I bought (2 eggs and applesouce are in mine). In any case, I used molasses and like the miffins alot. It has a nice hearty texture and is not too sweet.

I've made this recipe twice and it is delicious. The first batch I added chocolate chips and made a bread rather than muffin. Second batch was made as instructed on recipe. My next goal is to add carrots, nuts, applesauce and pineapple to make a mini carrot cake.. :)

Yummy recipe! I substituted chia gel for the egg and apple sauce for the oil and they still came out delicious!

I made these muffins today, but chopped up some dates and apples and used in place of the raisins along with 1/2 cup apple sauce (per your tips) in addition to everything else in the recipe and these muffins are so yummy, even my kids loved them!
