Nutritious Muffins

This recipe from Linda Rowe of Deming, Washington, was a winner in our baking contest in every way. This recipe was not tested in-house by Bob's Red Mill.


Mix together dry ingredients. Mix liquid ingredients in separate bowl. Combine the two mixtures and stir till moistened. Fold in carrot, dates and walnuts. Lightly grease or line muffin tin with paper cups. fill 2/3 full. Bake at 400°F for 18-20 minutes.

Makes 12 muffins.

I tried this recipe last night and it is so delicious! They came out neither dry or too moist, like many other oatmeal muffins I have tried. This is definitively a keeper!

I made these muffins this morning and they were excellent! Perfect for my husband and I to take out the door in the morning when we are rushed for time.

Delicious! I've made double batches twice now and freeze individually wrapped muffins for easy grab & go. The prep time is much longer than 15 min. if you add chopping the dates & breaking up chunks of brown sugar. It's worth it - the muffins are very hearty and fulfilling.
