Tomato & White Bean Soup

This recipe can be found on our bags of Small White Beans.

  • 1 cup SMALL WHITE BEANS
  • 4 cups Water
  • 2 tsp Olive Oil
  • 1 cup chopped Onion
  • 3 Garlic cloves, minced
  • two 14.5 oz cans Diced Tomatoes, undrained
  • 4 cups Chicken or Vegetable Broth
  • 1 Tbsp chopped fresh Parsley (or 1 tsp dried)
  • 3/4 tsp chopped fresh Oregano (or 1/4 tsp dried)
  • 1/2 tsp Salt
  • 1/4 tsp ground Black Pepper
  • 1/4 cup grated Parmesan Cheese

Directions

Step 1

Soak beans in water to cover overnight. Drain and rinse beans. Add 4 cups of fresh water (liquid should be 1 – 2” above top of beans). Bring to a boil; reduce heat and simmer about 1 ½ hours. OR pressure cook 6 – 8 minutes. Drain beans and set aside.

Step 2

Heat oil in a pot over medium heat.

Step 3

Add onion and garlic and sauté until tender, 3 – 5 minutes.

Step 4

Add all remaining ingredients except Parmesan cheese and bring to a boil. Reduce heat and simmer for 10 minutes.

Step 5

Portion into serving bowls and top with Parmesan cheese.
