Blueberry Bread

This Blueberry Bread recipe is a breakfast food but it is appropriate for any time and occasion. This recipe was not tested by Bob's Red Mill.


Step 1

Make sure you preheat the oven to 350°F.

Step 2

Place the lemon juice, oil, sugar, vanilla and soy milk in a medium mixing bowl and whisk.Then add the ground flax seeds. Sift the flour, baking powder and soda then stir well and add the blueberries. Mix gently with only a few strokes. Pour the batter into a lightly oiled loaf pan.

Step 3

Bake the loaf for 45-55 minutes. If the blueberries are not fresh, then you have to bake for longer, say 1 hour 30 minutes.

Step 4

Allow to cool before slicing.

This recipe produces a loaf that is amazingly moist but not mushy or soggy. Our family gobbled it up. I also substituted chocolate almond milk for the Soy Milk. This resulted in a better complexity of flavors.
