Carrot Raisin Muffins

This recipe is free of gluten, dairy, egg, baker's yeast, corn, soy & tree nuts. It is also free of added processed sugars (eg. granulated & brown sugar). And they taste great! This recipe was not tested by Bob's Red Mill.

Directions

Step 1

Preheat the oven to 325 degrees.

Step 2

In a small cooking pot put the white grape juice and dates. Bring to a boil. Remove from heat, cover and allow to cool.

Step 3

Prepare the muffin tin by wiping the cups with a paper towel dipped in a small amount of canola oil, or lining the cups with paper liners. (This recipe makes 10 muffins.) Set aside.

Step 4

In a small bowl, using a fork, stir together the flax seed meal and hot water. The mixture will begin to thicken like egg whites. Set aside.

Step 5

Grate and measure the carrots. Place into a large bowl. Measure the raisins and nuts (if used) and add to the bowl with the carrots.

Step 6

Stir together with a wire whisk in a medium sized bowl the brown rice flour, potato starch, tapioca flour, cinnamon, cream of tartar, baking soda and salt. Now sift the mixture 3 times in a sifter used only for gluten free flours. If you don’t have a sifter, then use a spoon and a wire mesh strainer.

Step 7

The dates and grape juice should be cool enough to blend by now. If not, remove the lid from the pot and wait a few more minutes. Put the dates and grape juice in a blender. Add the vegetable oil. Cover. Start the blender on low speed and gradually increase the speed until well blended.

Step 8

Pour the mixture into the large bowl with the carrots. Add the flour mixture and the flax seed meal and water. Stir well.

Step 9

Spoon into the prepared muffin tin.

Step 10

Bake in the preheated oven for 20- 25 minutes or until muffins test done with a toothpick. Remove from the oven and let cool in the tin on a wire rack for 5 minutes. Remove the muffins from the baking pan and let cool on the cooling rack.
