Peanut Butter Oatmeal Chocolate Chip Honey Cookies

A chewy, hearty gluten free cookie. This recipe was not tested by Bob's Red Mill

  • 1 cup blended Gluten Free Rolled Oats
  • 1 cup Gluten Free Rolled Oats
  • 1 tsp Xanthan Gum
  • 3 Tbsp Coconut Oil or Butter
  • 1 Egg
  • 2 Tbsp Raw Honey
  • 1 tsp Gluten Free Pure Vanilla
  • 1/3 cup Gluten Free Marshmallow Cream
  • 3/4 cup Gluten Free Dark Chocolate Chips
  • 1/2 cup Peanut Butter & Co. Crunch Time Peanut Butter

Directions

Step 1

Heat oven to 325 degrees.

Step 2

Pulse 1 cup rolled oatmeal in blender until flour. Pour into small mixing bowl and add 1 cup rolled oatmeal and xanthan gum, whisk well.

Step 3

In a medium mixing bowl, add coconut oil, egg, vanilla and honey. Whisk until blended. Add marshmallow cream, peanut butter, chocolate chips and oatmeal mixture and stir until well blended.

Step 4

Divide dough onto greased cookie sheet and bake for 10 minutes or until cookies are brown on the edges. Cool on sheet, eat for breakfast. Recipe is easily embiggened.
