Sopa de Quinua

This recipe can be found on our bags of Organic Quinoa Grain. Whole Grain! Gluten Free, High Fiber, Lactose Free, Low Cal, Low Sugar, Organic, Vegan.

  • 1 Tbsp Oil
  • 1 cup diced Onion
  • 4 Garlic cloves, minced
  • 1 Serrano Chile, minced
  • 1 tsp ground Cumin
  • 1/2 tsp ground Black Pepper
  • 2 Tomatoes diced
  • 1 medium Yukon Gold potato, cubed
  • 10 cups Water
  • 1 cup Yellow Corn Kernels
  • 1 cup diced Red Bell Pepper
  • 3/4 cup Organic Quinoa Grain
  • 1/4 cup chopped Parsley
  • 2 Tbsp chopped Cilantro
  • 2 Tbsp Lime Juice

Directions

Step 1

Heat oil in soup pot over medium heat. Add onion and cook until soft, about 10 minutes. Add garlic, Serrano, cumin and pepper and cook until fragrant, about 1 – 2 minutes.

Step 2

Add tomatoes, potatoes and broth and let cook over medium to medium-low heat until potato is soft, about 40 minutes.

Step 3

Add corn, red pepper and quinoa and let cook until quinoa is beginning to soften, about 7 – 10 minutes.

Step 4

Just before serving add parsley, cilantro and lime juice.

Makes 6 - 8 servings.

This soup was delicious and very easy to make. I substituted a small can of diced chilies for the Serrano chili and added some turkey sausage. If I remember correctly, I ate it every night for a week!

For liquids recipe mentions 10 cups water, but on directions on 2nd step it mentions broth. What is it, broth or water????
