Pumpkin Bran Flax Muffins

Pumpkin Bran Flax Muffins offer all the nutritional advantage of the omega-3's and fiber with a fall flavor. This is a simple modification of the existing Bran Flax Muffin recipe. This recipe was not tested by Bob's Red Mill.


Step 1

Heat oven to 350°F. Grease muffin tins.

Step 2

Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice. Stir in pumpkin, applesauce, currants or cranberries and nuts.

Step 3

Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened. Do not overmix. Fill muffin tins.

Step 4

Bake at 350 for 15-20 minutes.

Makes 15 servings.


I store these in the refrigerator. They can certainly be frozen successfully. Wonderful warm with butter melted on them.

I tried these because they are a variation of the carrot apple muffin recipe on the back of Bob's Mill flaxseed meal - and they were delicious! I think they have were more moist than the carrot apple muffins but they both are great! I use whole wheat pastry flour in both recipes.
