Pumpkin Bran Flax MuffinsContributed by: Carolyn MullinsPumpkin Bran Flax Muffins offer all the nutritional advantage of the omega-3's and fiber with a fall flavor. This is a simple modification of the existing Bran Flax Muffin recipe. This recipe was not tested by Bob's Red Mill.
DirectionsStep 1Heat oven to 350°F. Grease muffin tins.Step 2Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice. Stir in pumpkin, applesauce, currants or cranberries and nuts.Step 3Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened. Do not overmix. Fill muffin tins.Step 4Bake at 350 for 15-20 minutes.Makes 15 servings. NotesI store these in the refrigerator. They can certainly be frozen successfully. Wonderful warm with butter melted on them. |

I tried these because they are a variation of the carrot apple muffin recipe on the back of Bob's Mill flaxseed meal - and they were delicious! I think they have were more moist than the carrot apple muffins but they both are great! I use whole wheat pastry flour in both recipes.
