Steel Cut Oat Crusted Salmon with Dill Sauce

Contender for the 2012 Spar for the Spurtle. This recipe was not tested by Bob’s Red Mill.

Salmon Rub

  • 1/2 tsp Dill Weed
  • 1 tsp Nature's Seasons Seasoning Blend
  • 1 tsp Beau Monde seasoning
  • 2 Tbsp Olive Oil
  • 1/2 cup Steel Cut Oats
  • 4 Salmon Filets (approximately 6oz each)

Dill Sauce

  • 1/2 cup Yogurt (Plain Greek)
  • 1/2 tsp Dill Weed
  • 1/2 tsp Beau Monde seasoning
  • 1 tsp Horseradish
  • 2 Tbsp Parsley chopped
  • 1 Lemon's Juice


Salmon Rub

Step 1

Toast oats over medium-high heat for a few minutes until they begin to brown slightly. Once toasted, pound them with a mallet in a ziploc bag to make them finer which helps stick to the salmon.

Step 2

Mix oats with spices and oil and set aside.

Dill Sauce

Step 1

Coat both sides of salmon filets with the salmon rub. Saute in a little olive oil over medium heat for 3 - 4 minutes on each side.

Step 2

Place over a bed of sauteed spinach and top with the prepared dill sauce.

Serves 4.
