White Grits with Feta

Salty feta and creamy rich grits make this an excellent side dish or brunch option. Adapted from a recipe in "Saveur" magazine. Soy Free, Vegetarian.

  • 4 cups Milk
  • 2 cups White Corn Grits
  • Salt and Pepper to taste
  • 1 cup Feta Cheese crumbles
  • 1/2 cup Sour Cream (optional)

Directions

Step 1

Bring milk to a simmer in medium saucepan. Add corn grits and whisk continuously until thickened, about 5 minutes.

Step 2

Remove from heat and stir in half of the feta. Pour into a well-greased 9-inch pie pan and let cool until set, about 5 minutes.

Step 3

Place a 10-inch round serving plate on top of the pie plate and quickly flip to invert grits onto serving plate. Garnish with remaining feta and sour cream (if desired).

Serves 8.
