Pumpkin Pie Oat Bars

Contender for the 2012 Spar for the Spurtle. This recipe was not tested by Bob’s Red Mill.

Oat Bars

  • 2 cups Water
  • 2 cups Skim Milk
  • 1/2 cup Brown Sugar
  • 2 Tbsp Pumpkin Pie Spice
  • 1-1/4 cups Steel Cut Oats *
  • 15 oz canned Pumpkin Pie Filling

Crunchy Topping

Directions

Oat Bars

Step 1

Prepare a 9x9 pan by spraying the inside with cooking spray. Set aside.

Step 2

Combine the water, milk, brown sugar and pumpkin pie spice in a saucepan over high heat. Bring to a boil.

Step 3

Add steel cut oats and turn the heat to medium, stirring well. After 15-20 minutes, once the oats are creamy, add pumpkin pie filling and mix in. Freeze bars for 10 minutes (until set).

Step 4

Meanwhile make the crunchy topping.

Crunchy Topping

In a skillet, combine Steel Cut Oats, pumpkin seeds, and salt. Over low heat, toast until slightly browned. Remove. Sprinkle over the bars. Cut immediately and serve. Enjoy!

Serves 8.

I don't know what I did wrong but these bars never got solid. They stayed mushy. I will instead eat them as hot cereal.
