Raisin Bran Muffins

Contributed by: Jessica Stier

High fiber and high protein bran muffins that are healthier and tastier than anything storebought! This recipe was not tested by Bob's Red Mill. High fiber.

Directions

Step 1

Preheat your oven to 375 degrees Fahrenheit.

Step 2

In a large bowl, whisk together all the dry ingredients.

Step 3

In a medium-sized bowl, whisk together the wet ingredients and pour over the dry ingredients. Fold until just mixed (don\'t overmix!)

Step 4

Spray a 6-muffin tin with cooking spray and pour the batter in each tin. Bake for ~40 minutes, or until the tops have browned and a toothpick comes out clean.

Makes 6 large muffins.

Notes

Store in an airtight container otherwise it will dry out.
