Mediterranean Salad

Contender for the 2012 Spar for the Spurtle. This recipe was not tested by Bob's Red Mill.

  • 1 cup Steel Cut Oats *
  • 3 cups Water
  • 3 Vegetable Bouillon cubes
  • 2 tsp Dried Oregano divided
  • 1 tsp Garlic dried
  • 1 tsp Dried Onion
  • 15 cans Garbanzo Beans (15oz can) drained and rinsed
  • 20 Cherry Tomatoes halved
  • 2 Celery stalks, diced
  • 1/2 jar Kalamata Olives (about 4 oz)
  • 1/2 cup Basil (fresh)
  • 1 Lemon's Juice
  • 1/4 cup Olive Oil
  • Black Pepper to taste
  • 1/2 tsp Salt
  • Feta Cheese to garnish

Directions

Step 1

Combine steel cut oats, water, bouillon, 1 tsp oregano, garlic and onion. Cook about 10 minutes. Drain and quickly rinse to remove some of the starch.

Step 2

Combine with remaining ingredients. Transfer to a platter and garnish with feta cheese.

Serves about 8.

*Use our Gluten Free Steel Cut Oats to make this recipe Celiac-friendly.
