Peanut Butter Pumpkin CookiesContributed by: Debbie MoynihanThis is a healthy snack, created for my father-in-law who watches calories, but not nutritional value! He'll eat lots of treats and not much of the "real meal". This recipe was not tested by Bob's Red Mill. Low Cal, Soy Free.
DirectionsStep 1Cream peanut butter, butter and sugars together.Step 2Add eggs and vanilla to creamed mixture.Step 3Mix flours, soda and salt together and add to butter mixture.Step 4Gradually add small portions of pumpkin and oats into cookie mixture, stirring them in well.Step 5Add optional ingredients if desired.Step 6Bake in oven preheated to 375 degrees for 8-10 minutes.Makes 3 - 4 dozen. |
