Flax Oat Bran Zucchini Muffins

Flax Oat Bran Zucchini muffins are a moist nutritious and low carb start to your day, or for snack time. Great for kids lunchboxes too. This recipe was not tested by Bob's Red Mill. High Fiber, Low Cal, Low Fat, Soy Free.


Step 1

Mix all the dry ingredients in a large bowl. Combine completely.

Step 2

Stir in the zucchini, milk, egg and vanilla until just combined.

Step 3

Scoop into muffin pan.

Step 4

Bake for 18-20 mins at 350 degrees.

Makes 12 muffins.

The correct Oat Bran Cereal measurement is 3/4 cup.

can I use stevia instead of the sugars?

I'm trying to cut sugar & sweetener from my diet. I'm going to try Applesauce, a little honey, and banana to sweeten them. Anybody else have an idea?
