Whole Grain Fruit and Nut Bars

These hearty & refreshing whole grain bars are loaded with chewy dried fruit & nuts. With golden flaxseed & fresh citrus zest they make a nutritious, low-cal breakfast or snack to go! Whole Grain! High Fiber, Lactose Free, Low Cal, Soy Free, Vegan.

Step 1

Preheat oven to 350 degrees F and lightly grease an 11X7-inch baking pan with oil.

Step 2

Combine flour, oats, salt, cinnamon, baking powder and baking soda in a large bowl.

Step 3

Bring 1 cup water to boil in small saucepan. Turn off heat and whisk in agave nectar, apple sauce, canola oil and lemon zest and juice. Pour mixture over dry ingredients and stir until well incorporated.

Step 4

In a small bowl, combine flaxseed meal with 1/4 cup water. Whisk vigorously until frothy and then fold into oat mixture.

Step 5

Reserve small portion (roughly 2 Tbs total) of fruit, nuts, and cereal and set aside for topping. Fold remaining fruit, nuts and cereal into the oat mixture.

Step 6

Pour mixture into prepared baking pan and spread evenly. Sprinkle with flax seeds and the reserved fruit, nuts and cereal. Bake uncovered for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

Allow to cool and cut into 12 bars. Store in an airtight container in a cool place for up to 5 days.

It's important to give credit where credit is due: This recipe was inspired and adapted from Lorna Sass's Breakfast Muesli Bars (and the ingredients I had in my cupboard when I read it!)
