Crepes with Bananas and ChocolateContributed by: Sheryl WagnerThis is an easy gluten free crepe recipe using only brown rice flour (as flour). It can be filled with savory or sweet fillings as the crepe itself doesn't have any sugar added. This recipe was not tested by Bob's Red Mill. Gluten Free, Soy Free.
DirectionsStep 1In a 2 cup measuring cup, mix together milk, flour, salt, egg, and melted butter. Set aside.Step 2Heat a skillet on medium heat. Meanwhile, put chocolate chips in a microwave safe bowl and cook on high for 1 minute.Step 3Cook crepes one by one by pouring a small amount of batter into the heated pan while tilting the pan around to distribute batter evenly to get a thin crepe. Cook until an edge comes up easily. Grab crepe with fingertips and flip over. Cook other side for 10 seconds. Remove crepe to a plate.Step 4While crepes are cooking, stir heated chocolate chips until they are melted.Step 5Assemble crepes by spreading some chocolate in the middle of crepes, topping with sliced bananas, rolling and topping with more chocolate. Optional: top with sprinkled powdered sugar.NotesYou can make the batter the night before and save it in the refriberator. A good substitute for chocolate chips is Nutella. That would save 1-2 minutes on the recipe. Another yummy combination is jam on the inside and powdered sugar on top.
