Gluten/Dairy/Soy Free Oatmeal Cookies

Enjoy these Allergy friendly cookies! Gluten free, dairy free and soy free! YAY!! This recipe was not tested by Bob's Red Mill. Gluten Free, Lactose Free, Low Cal, Soy Free.

  • 1/4 cup Crisco or Non-hydrogenated Soy-Free Vegetable Shortening
  • 1 cup Sugar (any kind, I used Demerara)
  • 1 Egg
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1 cup GF Pancake Mix
  • 1-1/2 cups Gluten Free Steel Cut Oats
  • 1/4 cup Enjoy Life brand Mini Chocolate Chips

Directions

Step 1

Pre-heat oven to 375°F.

Step 2

Cream together shortening and sugar.

Step 3

Add 1 egg to mix, blend well.

Step 4

Add cinnamon, salt and pancake mix, beat for about a minute.

Step 5

Add oats and blend together.

Step 6

Add chocolate chips.

Step 7

Roll into balls, place on non-stick baking sheet and bake about 15 minutes. Let cool 5-10 minutes and enjoy with your favorite non dairy milk!

The taste was good! The oats were a little too crunchy for my taste. However I did tweak a few things which could have something to do with the outcome. I used coconut oil instead of shortening, I added a 1/2tsp of vanilla, and some raisins. Next time I will cook my oats before hand.

I loved how crunchy these were, in the middle they were a little more chewy but that could have to do with the length of time I cooked them (i.e.: take them out sooner for softer). They were VERY delicious you would never know they are gluten free.
