Butter Fried Steel Cut Oats with Whipped Honey Yogurt

Contender for the 2011 Spar for the Spurtle. This recipe was not tested by Bob's Red Mill. *Indulgent* Gluten Free, Soy Free.

  • 1/2 cup Gluten Free Steel Cut Oats
  • 1-1/2 cups Water
  • 1/2 Green Apple, diced
  • 1/4 cup Brown Sugar
  • 1 - 3 tsp Allspice - depending on taste preference
  • 1/4 cup Heavy Whipping Cream
  • 1 Tbsp Local Honey
  • 3 - 4 oz (approx half a small container) Vanilla Yogurt
  • 2 Eggs
  • lots of Butter (about 1/4 cup)
  • Berries/ Peaches and/or other Fruits
  • Almonds or Walnuts - if desired

Directions

Step 1

Prepare Steel Cut Oats per package directions (preparing a half portion).

Step 2

While those are cooking, prepare apple, brown sugar and allspice mixture. AND prepare Whipped Yogurt - Whip up the Heavy Whipping Cream, adding Honey and Yogurt, then whip that all together.

Step 3

When Oats are ready to 'set' add the Apple mixture to the pot first, to let all of those ingredients mingle together. While this mixture is setting, beat the two eggs and set aside. Slice Fruits and Berries as needed and set aside.

Step 4

After the Oats are set, begin melting the butter in a frying pan, and mix together the Eggs and Oat Mixture. Fry the whole shebang in a pan with all that melted butter!

Step 5

Plate the Fried Goodness and top with Whipped Yogurt and Fruit (and nuts if desired).
