Key Lime Pie Cheesecake Porridge

Contender for the 2011 Spar for the Spurtle. This recipe was not tested by Bob's Red Mill. *Indulgent* Gluten Free, Soy Free.

  • 1 cup Gluten Free Steel Cut Oats
  • 3 cups Water
  • 1/4 tsp Sea Salt
  • 1 pkg Cream Cheese (8oz package)
  • 2/3 cup Granulated Sugar
  • 1/4 cup Key Lime Juice
  • 1 Milk splash of if oats are too thick (not always necessary)
  • 1 Whipped Topping (container)


Step 1

Begin by bringing the salt and the water to a boil.

Step 2

Next add the oats, stir, cover and reduce heat to a simmer. Cook for approximately 20 minutes stirring occasionally.

Step 3

Next, when the oats are thickening, add in the sugar, the cream cheese, and the key lime juice. Stir together well until thoroughly incorporated. Spoon into a serving dish - it will thicken as it cools. Top with whipped topping, garnish and enjoy.
