Mushroom Cheeseburger Calzones

This flavorful combination of meaty mushrooms & lean ground beef with gooey cheese wrapped in a hearty gluten-free dough satisfies cravings for something indulgent. This recipe was not tested by Bob's Red Mill. *Indulgent* Gluten Free, High Fiber.



  • 1/2 cup Onion chopped
  • 8 oz Baby Portabello Mushrooms chopped
  • 3 Garlic cloves, minced
  • 12 oz Ground Beef (93% lean)
  • 1/2 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 1 Tbsp Worcestershire Sauce
  • 3 oz Pepperjack Cheese shredded (or Cheddar Cheese or non-dairy shredded cheese)



Step 1

Combine 2-3/4 cups gluten free all-purpose flour, psyllium husk powder, baking powder, baking soda, and salt in the bowl of a food processor. Pulse until combined.

Step 2

In a large glass measuring cup, whisk together the egg, water and olive oil. Pour into the food processor and pulse until a stick dough forms.

Step 3

Add remaining 1/4 cup flour and pulse a few more times, until the mixture starts to come together into a ball.

Step 4

Gather the dough and divide into 6 equal portions. Press each into a disk about 1/2-inch thick and wrap in plastic. Refrigerate for about 20 minutes, while preparing the filling.


Step 1

In a large nonstick saute pan, cook the onions and mushrooms over medium-low heat for about 5-7 minutes, until softened. Add garlic and beef. Increase heat to medium-high and cook, stirring with a wooden spoon to break up the meat, for about 5 minutes, or until meat is cooked through. Season with salt and pepper and stir in Worcestershire. Turn off heat.

Step 2

Preheat oven to 375ºF and line a baking sheet with parchment paper.

Step 3

Unwrap one round of dough and place on a lightly floured piece of parchment paper. Roll into a circle of about 9-inch diameter. Place 1/6th of the meat mixture and 1/2-oz of cheese on one side of the circle. Gently fold over the other half, crimping the edges together to seal. Transfer to the prepared baking sheet. Repeat with remaining ingredients.

Step 4

Bake for 15 minutes, or until dough is lightly browned and firm. Alternatively, freeze the unbaked calzones on a baking sheet, then wrap individually in plastic. Frozen calzones may be baked at 375ºF for 20 minutes.

Made the recipe to the letter, as I do with all recipes the first time I make them. The dough was dry and difficult to work with and after it was cooked fell apart. It was tasteless. I will not be making this recipe again too much money to waste this amount of product for bad results.
