Tropical Steamed Oats with Streusel Crumb Topping

Contender for the 2011 Spar for the Spurtle. This recipe was not tested by Bob's Red Mill. *Indulgent* High Fiber, Soy Free.

Oats

  • 1/2 cup Steel Cut Oats
  • 1/4 cup Fine Macaroon Coconut
  • 1/2 cup Coconut Milk
  • 1 Vanilla Bean Pod
  • 1/4 cup Crushed Pineapple
  • 1/4 cup Mango crushed
  • 1/4 cup Papaya crushed
  • 1/4 cup Pineapple , Mango and Papaya chopped for topping

Streusel

Directions

Oats

For main dish, combine all ingredients including fruit and place on cheesecloth in a two tiered steamer. Steam for 15 minutes. Alternately if you don't own a steamer, place oats in boiling water and turn down to medium to cook for 15 minutes. When done, add the remaining ingredients and cook under medium for 5 minutes.

Streusel

Step 1

For streusel topping, use a pastry blender to fold butter into flour, sugars and coconut until blended or forms crumbles. Fold in chopped walnuts. Place in a pan and cook under low to medium stirring constantly for 5 - 10 minutes with a spatula until the mixture is lightly toasted and smells like a macaroon cookie.

Step 2

For the final dish, plate the main dish of oats, top with chopped fruit and add the streusel topping.

Serves 8.
