Steel Cut Oats with Wild Rice and Blueberries

Contender for the 2011 Spar for the Spurtle. This recipe was not tested by Bob's Red Mill. High Fiber, Lactose Free, Soy Free, Vegan.

  • 1 cup Steel Cut Oats that have been processed in a food processor for 30 seconds to 1 minute
  • 2 cups cooked Wild Rice
  • 3 Tbsp Coconut Butter
  • 1 cup Hot Water
  • 2-1/2 cups Almond Milk, plus more if desired (or other non-dairy or dairy milk)
  • 2 Bananas, chopped
  • 2/3 cup Whole Shelled Almonds , chopped plus more to garnish
  • 1/2 cup Dried Blueberries , plus more to garnish
  • 4 Tbsp Pure Maple Syrup, plus more for garnish
  • 1/2 tsp Sea Salt

Directions

Step 1

In a sauce pan over medium heat, add coconut butter and steel cut oats. Toast, stirring constantly, 2 minutes.

Step 2

Add hot water and almond milk. Simmer until oats are done, approximately 20 minutes.

Step 3

Stir in cooked rice, bananas, almonds, blueberries, syrup and salt. Add more almond milk to achieve a desired consistency. Garnish with a sprinkle of almonds, dried blueberries and a drizzle of maple syrup.

Serves 8.
