Gluten Free Fluffy Pancakes or Waffles

A light and fluffy pancake that can be enjoyed by everyone.

Directions

Beat egg whites stiffy, set aside.

Mix ingredients in order given, folding in egg whites last. Pour 2"-3" circles of batter onto a heated griddle that has been sprayed with a nonstick vegetable spray.

Or ... pour 1 cup of batter into a preheated waffle iron that has been sprayed with a nonstick vegetable spray. Cook until golden brown. Serve with maple syrup or fresh fruit.

Makes 8 pancakes or 4 waffles.
