Low Cholesterol GF Bread

The BEST GF bread machine mix ever. I've replaced the eggs with 1/3 cup liquid egg whites, reduced the water to 1-1/2 c and I got the best results ever. This recipe was not tested by Bob's Red Mill. Gluten Free, High Fiber, Lactose Free, Low Sugar.

Directions

Step 1

Dissolve yeast in warm water and let stand for 5 minutes to foam. Have all ingredients at room temperature.

Step 2

Put dry mix in a large mixing bowl. Add liquid egg whites, oil, cider vinegar and yeast-water mixture.

Step 3

Blend all ingredients until smooth and mixture begins to thicken slightly. Pour into generously greased 9 x 5-inch nonstick pan. Smooth top of dough with wet spatula.

Step 4

Preheat oven to 375°F. Cover pan with plastic wrap and let rise in a warm place (75° - 80°F) until dough reaches the top of the pan, about 45 minutes.

Step 5

Bake 60 - 65 minutes or until internal temperature of bread reaches 205°F, covering bread with foil after it starts to brown.

Step 6

Let cool in pan for 5 minutes then unmold and let cool on wire rack.

Notes

*Bread Machine Instructions: Add ingredients to bread machine following manufacturer's instructions. Make sure to whisk the water, oil, liquid egg whites and cider vinegar together before adding to bread machine.
