Lemon Poppyseed Protein Muffins

A high-fibre, high-protein delicious lemon poppyseed muffin for only 100 calories and 8 grams of protein! This recipe was not tested by Bob's Red Mill. Low Cal, Low Carb, Low Sugar.

Directions

Step 1

Preheat oven to 325°F.

Step 2

Combine flours, protein powder, poppy seeds, baking powder, baking soda, stevia and lemon zest in a large mixing bowl until combined.

Step 3

In a blender, add Greek yogurt, cottage cheese, lemon juice, egg, oil and applesauce. Blend until just smooth.

Step 4

Pour blended ingredients into mixing bowl and stir until just combined. Pour into 8 muffin cases in a muffin tin.

Step 5

Bake for 25 minutes or until springy to the touch.

Makes 8 muffins.

Notes

The protein powder I used had about 24g a scoop, which contributed to the 8g of protein per muffin.
