DirectionsStep 1Preheat oven to 325°F.Step 2Combine flours, protein powder, poppy seeds, baking powder, baking soda, stevia and lemon zest in a large mixing bowl until combined.Step 3In a blender, add Greek yogurt, cottage cheese, lemon juice, egg, oil and applesauce. Blend until just smooth.Step 4Pour blended ingredients into mixing bowl and stir until just combined. Pour into 8 muffin cases in a muffin tin.Step 5Bake for 25 minutes or until springy to the touch.Makes 8 muffins. NotesThe protein powder I used had about 24g a scoop, which contributed to the 8g of protein per muffin. |
