Carrot Raisin Muffins

Creamy and delicious organic carrot raisin muffins. Make a double batch! One isn't enough. This recipe was not tested by Bob's Red Mill. High Fiber, Low Fat, Organic.

  • 3/4 cup Organic High Fiber Cereal
  • 3/4 cup Organic Brown Rice Flour
  • 1/2 cup organic Brown Sugar
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Baking Soda
  • 1 organic Banana, mashed
  • 1/2 cup organic Sour Cream*
  • 3 Tbsp ready made Egg Whites
  • 3 Tbsp organic Applesauce
  • 1/2 tsp Vanilla
  • 1/2 cup organic shredded Carrot (pre-shredded is easiest)
  • 1/2 cup organic Thompson Raisins


Step 1

Mix together cereal, brown rice flour, brown sugar, baking powder, cinnamon and baking soda.

Step 2

In a separate bowl combine banana, sour cream, egg whites, applesauce and vanilla.

Step 3

Combine the two mixtures and stir until moistened. Fold in carrots and raisins.

Step 4

Lightly grease or line a muffin tin with paper cups. Fill each cup 2/3 full.

Step 5

Bake at 400°F for 18 - 20 minutes.

Makes 12 muffins.


*Sometimes I use slightly less sour cream than half a cup just because it's a lot thicker than yogurt, which is in the original recipe.
