Carrot Raisin MuffinsContributed by: Anna HeifetzCreamy and delicious organic carrot raisin muffins. Make a double batch! One isn't enough. This recipe was not tested by Bob's Red Mill. High Fiber, Low Fat, Organic.
DirectionsStep 1Mix together cereal, brown rice flour, brown sugar, baking powder, cinnamon and baking soda.Step 2In a separate bowl combine banana, sour cream, egg whites, applesauce and vanilla.Step 3Combine the two mixtures and stir until moistened. Fold in carrots and raisins.Step 4Lightly grease or line a muffin tin with paper cups. Fill each cup 2/3 full.Step 5Bake at 400°F for 18 - 20 minutes.Makes 12 muffins. Notes*Sometimes I use slightly less sour cream than half a cup just because it's a lot thicker than yogurt, which is in the original recipe. |
