DirectionsStep 1Preheat the oven to 325°F. Line an 8×8 pan with parchment paper.Step 2Add the oats, nuts and seeds, coconut flakes, millet, flaxseed and salt into a large bowl. Mix well.Step 3Puree the dates in a food processor. In a medium saucepan, combine the pureed dates, brown rice syrup, peanut butter and coconut oil over medium heat. Stir until combined.Step 4Add the wet mixture to the dry mixture and stir well. Once it gets difficult to stir, use your hands to continue mixing until it is completely incorporated. This will be very sticky!Step 5Dump the mixture into the prepared pan. Press down to flatten with your fingers, then use a small piece of parchment paper to firmly press into the pan.Step 6Bake for about 25 minutes. Let cool completely in the pan, then remove and cut into bars. Store in an airtight container for up to one week.Makes 16 bars. |
