Kofta BallsContributed by: Sarah HouseI found this recipe in a book from a used book sale-"The Higher Taste." These are great as a substitute for meatballs in spaghetti, with tomato jam as an appetizer or made into larger patties for burgers. Gluten Free, High Fiber, Soy Free, Vegan.
DirectionsStep 1Use a food processor to grate the cauliflower and cabbage (and onion, if using) or dice very fine.Step 2Sift the garbanzo bean flour and spices. Add to the grated vegetables and mix thorougly.Step 3Form into balls or patties and set aside.Step 4These can be baked or fried using ghee or oil. To bake, grease or line a baking sheet with parchment paper and bake at 350 until browned, about 20 minutes. To fry, heat ghee or oil in a wide saute pan. Add balls or patties and fry until golden. Flip and fry on second side. Let drain on paper towels. Serve warm.Makes 4 servings. Notes*Hing is an Indian spice used to substitute for onions and garlic. **Garam Masala is an Indian spice blend. Visit Penzey's Spice online if you can't find it locally. ***Ghee is clarified butter. It has a pleasant, nutty flavor. |
