Amaranth Fudgies

Mellow chocolatey cookies with all the healthy benefits of amaranth. Gluten Free, Lactose Free, Low Cal, Low Carb.


Step 1

Preheat oven to 350°F. Lightly grease a cookie sheet, set aside.

Step 2

Combine oil, honey and water in saucepan. Heat gently to melt honey and remove from heat to cool.

Step 3

Sift flour and carob powder before measuring. Combine dry ingredients and sift again. Stir vanilla into liquids, then add dry ingredients. Fold in nut pieces or top each cookie with half a nut.

Step 4

Drop batter by rounded teaspoon onto prepared cookie sheet.

Step 5

Bake 12 - 15 minutes, until cookies are golden. Remove to wire rack to cool.

Makes about 2 dozen.
