Amaranth Date Doodles

Warm cinnamon and sweet dates make these healthy cookies delectable. Gluten Free, Lactose Free, Low Cal, Low Carb.


Step 1

Preheat oven to 350°F. Lightly grease a cookie sheet, set aside.

Step 2

Combine oil, honey, water and orange or lemon peel in saucepan. Heat gently to melt honey and remove from heat to cool.

Step 3

Sift flours before measuring. Combine dry ingredients and sift again. Stir vanilla into liquids, then add dry ingredients. Fold in dates and nuts.

Step 4

Drop batter by rounded teaspoon onto prepared cookie sheet.

Step 5

Bake 12 - 15 minutes, until cookies are golden. Remove to wire rack to cool.

Makes about 2 dozen.
