Amaranth Chippies

Chocolate chip-style cookies with the added benefits of amaranth. Gluten Free, Lactose Free, Low Cal, Low Carb, Low Sugar.


Step 1

Preheat oven to 350°F. Lightly grease a cookie sheet, set aside.

Step 2

Combine oil, honey and water in saucepan. Heat gently to melt honey and remove from heat to cool.

Step 3

Sift flours before measuring. Combine dry ingredients and sift again. Stir vanilla into liquids, then add dry ingredients. Fold in carob chips and chopped nuts.

Step 4

Drop batter by rounded teaspoon onto prepared cookie sheet.

Step 5

Bake 12 - 15 minutes, until cookies a golden. Remove to cool on a wire rack.

Makes about 2 dozen.

These cookies were terrible! I have never made a bad batch of cookies in my life until theses. The bitter aftertaste stillmakes me want to shave my tongue!
