Couscous Salad with Walnuts & Feta Cheese

  • 2 Medium Yellow Crookneck Squash (thinly sliced)
  • 4-5 Mushrooms (washed & sliced)
  • 4 Roma Tomatoes (diced)
  • 1 cup chopped Walnuts- Baker's Pieces
  • 1 large Head of Romaine
  • 2 cups Boiling Water
  • 2 cups Golden Couscous (uncooked)

Dressing

  • 4 oz Crumbled Feta Cheese
  • 1-2 pinches ground black Pepper
  • 1/8 tsp Sea Salt
  • 1/4 tsp ground Cinnamon, Saigon (Premium)
  • 1/2 tsp Sugar
  • 2 Cloves Fresh Garlic, pressed
  • 3 Tb Red Wine Vinegar
  • 1/2 cup Virgin Olive Oil

Directions

Place couscous in a heatproof bowl and add 2 cups boiling water; mix, cover and let stand for at least 10 minutes. Reserve at room temperature.

Wash and dry lettuce; tear into bits and place into a large serving bowl or deep platter. Add walnuts, tomatoes, mushrooms, squash and gently toss.

The Dressing: In a bowl, whisk oil, vinegar, garlic, sugar, cinnamon, salt and pepper until very well-combined. Pour dressing over salad; add the couscous and sprinkle on the feta cheese. Gently mix. Serve at room temperature, or slightly chilled. In desired, decorate with purple onion rings. Makes 10 Servings.
