DirectionsStep 1Preheat oven to 350°F. Oil an 8-1/2 x 4-1/2 inch loaf pan.Step 2In a large bowl, sift together unbleached white flour, whole wheat flour, flaxseed meal, baking powder, cinnamon and cardamom (if using). Set aside.Step 3In a separate bowl, mash bananas and stir in lemon zest (if using). Set aside.Step 4Mix oil, sugar and salt until incorporated. Add eggs and vanilla and mix until well combined.Step 5Add flour mixture to sugar mixture, alternating with bananas. Scrape down the sides of the mixing bowl often.Step 6Pour batter into the prepared laof pan and tap lightly on the counter to release any air bubbles.Step 7Bake at 350°F until the sides of the loaf begin to pull away from the pan and a toothpick inserted into the center comes out clean, about 50 - 60 minutes.Makes 1 loaf, about 16 servings. |

I didnt have any white flour and I was a banana short so I used all whole wheat flour and two bananas and added 3.2 Ozs of no sugar added apple sauce. The bread is heavy but moist and very yummy! I plan on making it again soon!

I just made this recipe. The only difference it that I used Extra Virgin COCONUT oil instead of vegetable oil, and instead of sugar, I put in 2 Tablespoons of Stevia extract. I love it. Its really good. Ill be making this again.
