Banana Flax Bread

Old bananas? Make banana bread! Lactose Free, Low Cal, Soy Free.

Directions

Step 1

Preheat oven to 350°F. Oil an 8-1/2 x 4-1/2 inch loaf pan.

Step 2

In a large bowl, sift together unbleached white flour, whole wheat flour, flaxseed meal, baking powder, cinnamon and cardamom (if using). Set aside.

Step 3

In a separate bowl, mash bananas and stir in lemon zest (if using). Set aside.

Step 4

Mix oil, sugar and salt until incorporated. Add eggs and vanilla and mix until well combined.

Step 5

Add flour mixture to sugar mixture, alternating with bananas. Scrape down the sides of the mixing bowl often.

Step 6

Pour batter into the prepared laof pan and tap lightly on the counter to release any air bubbles.

Step 7

Bake at 350°F until the sides of the loaf begin to pull away from the pan and a toothpick inserted into the center comes out clean, about 50 - 60 minutes.

Makes 1 loaf, about 16 servings.

I didnt have any white flour and I was a banana short so I used all whole wheat flour and two bananas and added 3.2 Ozs of no sugar added apple sauce. The bread is heavy but moist and very yummy! I plan on making it again soon!

I just made this recipe. The only difference it that I used Extra Virgin COCONUT oil instead of vegetable oil, and instead of sugar, I put in 2 Tablespoons of Stevia extract. I love it. Its really good. Ill be making this again.

Excellent recipe,add some dried berries,since I had only 4 apple bananas. The bread was moist & delicious.Mahalo(thank-you)
