Banana Bread Cookies

This recipe was not tested by Bob's Red Mill. Gluten Free, High Fiber, Lactose Free, Low Cal, Low Fat, Soy Free.


Step 1

Pre-heat oven to 375°F.
Mix ground flax seed with two tbsp of water and set aside.

Step 2

Mix flour, oats, salt, spices, raisins, baking soda and baking powder together.

Step 3

Mix together bananas; make sure to leave some chunks. Then add honey, vanilla extract, almond extract and applesauce.

Step 4

Add Flax "egg" to wet mixture.

Step 5

Add wet ingredients to dry, mix together.

Step 6

Put parchment paper on baking pan and scoop about three tbsp of cookie dough onto pan. These cookies will rise a little but not much, make sure to shape the way you desire, they stay pretty much the same size as you form them in beginning.

Step 7

Bake for 13-14 minutes, take out and place on wire rack to cool. Banana pieces will be extremely hot for about 5 minutes.

Makes 10 - 15 minutes.

I didn't know what to expect from this recipe, but I can tell you its a winner.
These cookies are flat out addictive!

The batter looked amazing, but I went ahead and added about a cup of gluten-free chocolate chips. I yielded almost 30 big cookies... almost twice the normal yield (ok, maybe it was a little more than a cup of chocolate chips. This was my first time using teff. Will def make again!
