The batter looked amazing, but I went ahead and added about a cup of gluten-free chocolate chips. I yielded almost 30 big cookies... almost twice the normal yield (ok, maybe it was a little more than a cup of chocolate chips. This was my first time using teff. Will def make again!

Can you sub an egg for the flaxseed meal and water?
Bob's Red Mill December 11, 2014
Yes, you can substitute 1 egg in place of the 2 tsp flaxseed meal and 2 Tbsp water in this recipe.
