Couscous Crunch Bars

Topping

  • 1/4 cup Coconut Flakes
  • 1/2 tsp ground Nutmeg
  • 1 tsp ground Cinnamon, Saigon (Premium)
  • 1/4 cup chopped Almonds (Whole Shelled)
  • 1/4 cup Frozen Apple Juice Concentrate

  • 1 cup 1/4 Regular Rolled Oats
  • 2 Tb Brown Rice Syrup

Directions

Preheat oven to 350°F. Lightly oil a 9" x 13" baking pan; set aside. In a blender, whiz the rolled oats briefly; set aside.
In a mixing bowl blend together the whole wheat pastry flour, baking powder, salt and whizzed rolled oats. In another bowl mix together the apple juice concentrate, water, oil, rice syrup, egg and vanilla extract. Combine the wet ingredients with the whole wheat pastry flour/oat mixture; stir into the batter the cooked couscous. Pour batter into prepared baking pan.

Topping: Combine all ingredients in a small bowl; blend well and spread topping over batter.

Bake for 40 minutes. Cool and cut into squares. Makes 12 servings.
