Sausage Spinach Vegi Soup

A healthy, hearty and filling soup for a cold winter day. Perfect to take to work and warm up for lunch! This recipe was not tested by Bob's Red Mill. High Fiber, Lactose Free, Soy Free.

  • 2 cups Vegi Soup Mix
  • 1 Onion, chopped
  • 1 clove Garlic, minced
  • 1 cup Carrots, shredded
  • 2 Celery stalks, chopped
  • 8 cups Chicken Broth
  • 16 oz Turkey Sausage
  • 1 - 10 oz pkgs frozen chopped Spinach
  • 1 pinch Salt, Pepper or Mrs. Dash extra spicy seasoning blend
  • 2 Tbsp Olive Oil

Directions

Step 1

Add 2 cups of Bob's Red Mill Vegi Soup mix to 8 cups of salted boiling water, and simmer for one hour.

Step 2

Drain, add broth to cooked soup mix, refrigerate overnight.

Step 3

Next day, sauté onion, celery and garlic in olive oil until soft, set aside. In large pot, brown and crumble the turkey sausage, drain if necessary. Add in the onions, celery, carrots, garlic, broth and soup vegetables. Bring to a boil, reduce heat, add spinach, and simmer for about one-half hour. Season with salt and pepper, or add a spicy seasoning mix for a spicier flavor.
