Quick Couscous Pudding

  • 1 pinch Cinnamon
  • 1 - container Vanilla Lowfat Yogurt
  • 1/8 cup Raisins
  • 2 Tb Sugar
  • 1 cup Nonfat Milk
  • 1/2 cup Golden Couscous

Directions

In a medium saucepan heat milk just to boiling.

Combine the couscous, hot milk, sugar and raisins in a medium bowl; set aside 20 minutes or until the couscous absorbs all of the milk.

Stir in the 8 oz. yogurt. Sprinkle the top of the pudding with cinnamon; serve warm or cover and refrigerate until ready to serve.

If pudding is not served within 2 or 3 hours, it may be necessary to stir in additional yogurt before serving.

Makes 4 Servings.
