Blue Corn Bread

This is a wheat-free recipe but may contain gluten.


Preheat oven to 350°F. Grease an 8-inch square baking pan, set aside.

Blend the dry ingredients together. Next, combine the wet ingredients and add them to the dry. Mix well. Pour into prepared baking pan. Bake for 30 minutes at 350°.

Makes 9 Servings.

I tried this recipe last night with yellow corn as substitute.

I am a first time baker.

I am very delighted to find this recipe being so simple in terms of list of ingredients.

I did however, have a couple of questions though. The bread did not rise as much, I wonder why?

If your cornbread failed to rise as much, it's possible that your baking powder is losing reactivity.

I totally use this recipe just about every other week!! I truly appreciate blue corn over yellow!! Love how it's "flour" free! I tell everyone about this easy loads of antioxidant filled recipe!!
