Oatmeal Cookies

These are the best and easiest GF oatmeal cookies we've made yet! Thanks, BRM, for making GF baking enjoyable! Gluten Free, Soy Free.


Step 1

Cream butter, coconut oil, brown sugar and sugar in a mixer.

Step 2

Add eggs, vanilla and flax seeds and mix on medium.

Step 3

Dump in bag of bread mix and mix on low until combined.

Step 4

Add rolled oats and stir well.

Step 5

Plop onto parchment lined sheets in heaping tablespoons and pat just a bit.

Step 6

Bake at 350°F for 20 - 23 minutes. Tops get JUST browned and they'll be done inside.

Makes about 3 dozen large cookies.


*If you like a more stiff cookie, add more oats to make it a little less cakey. 4 cups was perfect for us to get a nice bite.

These were awesome! I tried to use a little less butter, but they were too crumbly, so stick with the full amount. These were served at a meeting I attended and there were rave reviews. Thanks!

These are wonderful, hearty, healthy cookies. What a treat! I added 1 cup of chopped walnuts to increase the protein content. My kids loved them!
