10 Grain Bread

A delicious blend of 10 different grains made this loaf a winner in the 2001 Oregon State Fair. This recipe was not tested by Bob's Red Mill. Low Fat, Low Sugar.

Directions

Step 1

In a small bowl combine yeast, warm water, sugar, salt and butter. Blend well; let proof for 5 minutes.

Step 2

In a large bowl combine white flour, whole wheat flour, bran flakes, 10 grain cereal, soy flour, gluten flour, wheat germ and non-fat dry milk; blend well. Add yeast-water mixture to dry ingredients and mix well by hand. Cover bowl loosely with plastic wrap and put in a warm place to rise until doubled; punch down.

Step 3

Knead and shape into loaf; place loaf in greased 9 x 5-inch loaf pan; cover and let rise in a warm place for 20 - 30 minutes. Preheat oven to 350°F and bake for 25 - 35 minutes using the center rack of the oven.

Makes 1 loaf (13 slices).
