Buttermilk Whole Wheat Waffles


Sift together the first 4 ingredients (whole wheat pastry flour through salt).

Combine and beat the egg yolks, buttermilk and vegetable oil. Add this to the flour mixture, blend. Fold in the stiffly beaten egg whites.

Bake in preheated waffle iron until golden. Reheat waffle iron before putting another waffle in each time. Serve with butter and honey or pure maple syrup.

Yield: 6 Waffles

Anyone who makes waffles knows it is a labor of love. These are tender and airy. I added 2 Tbsp organic sugar and a little vanilla and they were PERFECT!
