Swedish Cardamom Wheat Bread

3rd Place Winner at the 2011 Tillamook County Fair.


Step 1

Mix the yeast with 1/2 cup warm water and set aside.

Step 2

Combine the flours, salt, milk powder and sugar in a large bowl. Stir in cardamom and salt and set aside.

Step 3

In a separate large bowl mix the eggs, butter, cooked oatmeal, remaining water and milk. Mix in the yeast mixture.

Step 4

Slowly add the dry ingredients and mix until it makes a ball. Knead thoroughly adding white flour as needed.

Step 5

Place in a greased bowl and cover. Let sit until doubled in bulk. Punch down, cover and let rise again until doubled in size.

Step 6

Shape into two loaves and bake in greased loaf pans. Bake at 350°F for approximately 45 minutes. Makes 2 large loaves.
