Apple Bran Banana Bread

Fantastic and healthy banana bread using our muffin mix...from Ireland! This recipe was not tested by Bob's Red Mill. High Fiber.

  • 2 cups Spice Apple Bran Muffin Mix
  • 1 Tbsp Honey
  • 1/2 cup Sugar
  • 1 tsp Vanilla or Almond Extract
  • 1 Egg or 3 Tb Applesauce
  • 2 - 3 Bananas, ripe and mashed
  • 1/2 cup Vegetable Oil (NOT olive)
  • 1/2 cup Walnuts- Baker's Pieces (optional)
  • 1 tsp Cinnamon (optional)

Directions

Step 1

Mix together muffin mix, sugar, walnuts and cinnamon. In a separate bowl, combine honey, extract, applesauce, bananas and oil.

Step 2

Add the dry to the wet and mix until well combined.

Step 3

Grease a loaf tin or Pyrex dish and be aware - Mixture will rise! Bake in a hot 400°F oven for approx. 1 hour 5 minutes. Check that a toothpick comes out dry after 45-50 minutes.

Notes

Freezes really well and stays moist.

Nice idea for this mix, however, there is not nearly enough liquid in this recipe. I had to add 1 cup of liquid (1/2 water 1/2 orange juice) to even get it to look like a quick bread recipe. And it only baked for 45 minutes total.
