Betty's Honey Spelt Shortbread

Tasty shortbread from customer Betty Clay of Saturdayisshortbreadday.blogspot.com. This recipe is wheat-free, but does contain gluten.

Directions

Step 1

Blend flours, sugar and salt in a food processor. Add butter and honey and process until the mixture forms a ball.

Step 2

Pour ingredients onto a sheet of wax paper and knead into a flat disc. Carefully remove wax paper and press shortbread into an 8-inch cast iron skillet. Prick top with toothpick and press fork around edges.

Step 3

Bake on middle oven rack for 40-42 minutes. Immediately after removing shortbread from oven, cut into 12 wedges. Let cool in pan. Enjoy

Step 4

Preheat oven to 300°F.
