Organic Spelt Crepes

Sometimes, I place the jam inside the crepe and then roll it up. My family likes the jam surprise inside!

  • 3 cups Organic Spelt Flour
  • 1 tsp Sea Salt
  • 1 cup Almond Milk or 2% Cow's Milk
  • 2 Eggs beaten
  • 2 Egg Whites
  • 2 cups Water
  • 1 tsp Sugar
  • 2 tsp Grapeseed Oil
  • 2 Tbsp Yogurt (2% preferred)
  • 1 Tbsp Strawberry Jam
  • Powdered Sugar sprinkles as needed


Step 1

Place organic spelt flour and salt in a large mixing bowl. Blend until incorporated.

Step 2

Add milk, eggs, egg whites and water. Sprinkle the sugar on top. Whisk until blended. Add more water if consistency is too thick.

Step 3

Heat a saute pan on medium heat. Add grapeseed oil. When heated through, pour about 1/2 cup of batter in the pan. Cook until golden on each side.

Step 4

Place a dollop of yogurt on top with jam. Sprinkle with icing or powdered sugar.
